3 - Eggs |

2 - Tablespoons Milk |
|
1 - Tablespoon Butter or Margarine |
|
1/2 - Cup Flaked Smoked Fish |
|
1/4 - Cup Shredded Cheddar or Swiss Cheese |
|
Salt and Pepper to taste. |
Melt butter in skillet or omelet pan over medium heat. In small bowl beat eggs and milk. Add to skillet and cook until eggs are set, 3 - 5 minutes. Sprinkle fish and cheese over one half of the omelet. With spatula fold the other half carefully over the filling.
Cook until cheese melts about 1 to 2 minutes.
