G Smoked Fish Omelet -

3 - Eggs

2 - Tablespoons Milk

1 - Tablespoon Butter or Margarine

1/2 - Cup Flaked Smoked Fish

1/4 - Cup Shredded Cheddar or Swiss Cheese

Salt and Pepper to taste.

Melt butter in skillet or omelet pan over medium heat. In small bowl beat eggs and milk. Add to skillet and cook until eggs are set, 3 - 5 minutes.  Sprinkle fish and cheese over one half of the omelet. With spatula fold the other half carefully over the filling.

Cook until cheese melts about 1 to 2 minutes.
