2 - Pounds Boneless Walleye Fillets

2-Eggs

3/4 - Cup Beer of Choice (You've got to drink the Leftovers - It's the Law)

1/2 - Cup Cornmeal

1/2 - Cup Flour

1/2 - Cup Parmesan Cheese

2 - teaspoons Italian Seasoning

Butter or Margarine

Olive Oil

Seasoning Salt

Black Pepper


Beat eggs, add beer and mix thoroughly. Add fillets allowing to stand in mixture a few minutes. Mix Cornmeal, Flour, Parmesan Cheese, and Italian Seasoning. Add Seasoning Salt, and Pepper to taste. Dredge fillets in this mix, coating liberally. Heat one part olive oil, one part butter or margarine in skillet, over medium-high heat. Brown coated fillets. About 3 - 5 minutes per side, dependent on size of fillet.
